Alkalized Cocoa Powder

I've started using unsweetened Ghirardelli cocoa powder in my morning coffee. I understand it is not alkalized.

Is it better for one than other kinds of cocoa powder that have been alkalized? Yes it is. Natural, non-alkalized, cocoa powder is better for you. Good choice!


How does the alkalizing process effect the antioxidants found in cocoa powder? The alkalizing process destroys a lot of the antioxidants found in cocoa powder. A 2008 study found that from 60% to 90% of the antioxidants are destroyed depending upon the degree of alkalization.
